Ingredients
- 1 cup red or white quinoa
- 3 medium tomatoes
- 2 cups edamame beans or sweet corn kernels
- 2 handfuls baby spinach
Herb dressing
- 2 garlic cloves, crushed
- 1/2 cup basil or mint, finely chopped
- 1 tbsp lemon juice
- 1 tsp rice vinegar
- 2 tbsp olive oil
- 1 tsp finely crushed toasted coriander seeds
- Salt and grinds of black pepper
Method
Toast the dry red or white quinoa in a pan until it starts to smell nutty and begins to pop (about 2-3 minutes). Place in a sieve and rinse under cold water until water runs clear. Place in a pot with 3 cups water, bring to a boil then cover and simmer until grains have become transparent, the spiral- like germ has separated and water has been absorbed (about 15 minutes). Cool.
To make Herby Dressing, shake all ingredients in a jar with salt and pepper to taste.
Core and chop the tomatoes and stir into quinoa with edamame beans or sweetcorn kernels, baby spinach and Herby Dressing.
